Almond & olive oil cupcakes

Ingredients

3 eggs
½ cup extra virgin olive oil
½ cup honey
pinch of salt
½ cup almonds ground or almond meal
1 cup self-raising flour

  1. Preheat the oven to 180°C.
  2. Cream eggs, olive oil, honey and salt until light and fluffy.
  3. Add almonds, flour and any of the variations listed below. Mix together lightly.
  4. Bake for 15 minutes.

Variations:

  • Half a cup of chopped apples and a teaspoon of cinnamon.
  • Half a cup of raspberries and a quarter of a cup of chocolate chips.
  • Half a cup of chopped peaches and replace almonds with coconut.
