Bottled cherries

1. Wash jars and lids in hot soapy water and rinse well. Place the jars in the oven on a moderate temperature (about 100°C) for 10 minutes to sterilise.
2. Make your preserving liquid by combining 2/3 cup of honey in 200ml of boiling water and then add 300ml of cold water. Using these proportions, make enough preserving liquid so that you will be able to fill all your jars.
3. Wash cherries and remove stalks and pack neatly into bottles.
4. Fill each jar to the top with the prepared preserving liquid.
5. Screw the lids on the jars and then release half a turn.
6. Put a large pot on the stove with a rack on the bottom.
7. Place the filled jars on the rack in the pot and fill the pot with cold water until it reaches to just under the lids of the jars.
8. Place the lid on the pot and heat slowly, taking 45 minutes or more, until the temperature reaches 85°C. Hold at this temperature for 1 hour and 10 minutes.
9. Remove the jars from the pot and stand on a board or towel on a bench top.
10. Leave to stand undisturbed until completely cold (approximately 24 hours).
