Cherry vinegar


2 cups ripe cherries, with pits and stems, smashed
1 bottle of inexpensive balsamic vinegar, enough to cover the cherries by a few inches

1. Smash the cherries in a bowl with a fork (the riper they are the easier this will be.)
2. Cover the cherries with the vinegar by at least several centimetres.
3. Top the bowl with a plate to keep any bugs out and set aside.
4. Test the vinegar each day and eventually the harsh flavours will begin to mellow and allow some of the cherry to come forward.
5. After 10 days, strain the cherries and decant the vinegar into a clean sterilised jar.
