Dried cherries

1. Turn the oven on to the lowest temperature and space the cooking racks evenly apart.
2. Spread cherries out in one even layer on wire cooling racks and then place the racks on top of baking trays.
3. Place the baking trays in the oven.
4. After about 4 hours you will notice signs of the cherries starting to shrivel.
5. Check the cherries again at 6 hours and they will have shrunk to the size of raisins and turned deep purple.
6. The cherries will still be a tad chewy, but will also be dehydrated enough that they should keep for a few months in an airtight container.
