Marshmallow pavlova


4 egg whites
1 cup castor sugar
1 tbsp cornflour
1 tsp vinegar

1. Preheat oven to 180°C.
2. Beat egg whites, until stiff, and ½ cup castor sugar, beat thoroughly until sugar is dissolved (about 5 minutes).
3. Add remaining sugar, a tablespoon at a time, beating well after each addition.
4. Lightly fold in sifted cornflour, then vinegar.
5. Place baking paper on a tray and spoon mixture onto baking paper making a round shape.
6. Reduce heat to slow and bake pavlova for 1¼ hours.
7. Cool in oven with door ajar.
